It is GRILL season, people. And since securing a gas grill for the first time in our marriage, we have been grilling on a regular basis. When you don't have to buy a bag o' charcoal, work your butt off to get it to light, wait for it to heat to a reasonable temperature and then throwing the meat on, grilling becomes immensely easier.
We love grilling everything. And I have some great grill marinades and rubs that we've fallen in love with over the years (just check out the recipe index). This past Saturday, I was about to make up my usual Grill Marinade for the flank steak that I'd defrosted, but inspiration struck, and I tried something completely different.
And it was fabulouso.
I feel bad even calling this a recipe, but I guess since it involves more than one ingredient, it is such. This meal was so simple and so incredibly tasty. Perfect for those nights when you don't have time to create something complicated, but you don't want to lose any flavor.

Pesto Marinated Flank Steak
- 1-2 lb flank steak (aka "london broil")
- 1/4- 1/2 cup of pesto (store bought or homemade)
Place the flank steak on a plate. With a knife or spatula, spread 1/8-1/4 cup (depending on the size and shape of your steak) over the top of the flank steak. Flip the steak, and repeat with the other side.
Put steak in a ziptop bag, and marinate in the refrigerator for 1-4 hours.
Heat the grill to medium heat, and grill the steak on each side for roughly 10 minutes on each side.
Let the steak sit for 3-5 minutes (to redistribute juices).
Cut into strips, serve and enjoy!

How simple is THAT? It's almost a crime. BUT IT'S SO GOOD. The steak was so moist and the pesto made it full of flavor. Hubby and I agreed this method would work well with chicken too.
Hubby served the steak with some potatoes he had put in a foil packet and grilled - they were amazing! So I will share that recipe next week. Steak goes well with potatoes, and I love a side of asparagus or broccoli.
If you do not have time to marinate the steak, feel free to use the pesto as a rub, and immediately grill. It will turn out equally delicious.
