It's getting to be grilling season (here in the Philly area, this week will be quite Spring-like, so we'll be grilling, like, all week). And there is nothing like having good rubs and marinades on hand for your chicken, meat and veggies. Infusing flavor really kicks grilled meals up a notch - and today's recipe is KICKIN'.

Today's recipe comes from my dear friend, Maria. Well. Actually, it comes from her husband, Kyle, who created the recipe. But since it was Maria who first served this recipe to me (and subsequently emailed it to me), I am saying it comes from Maria.

Anyway, last week I was over Maria's, and we were wrangling 15 kids. Ok. That's not true. We were wrangling my 2 chicklets, her 1 chicklet and our friend Jen's 2 chicklets while Jen packed her house up to move (sadness ensued). After a rousing 2-hour long game of CatchThatKidSpitThatOutStopHittingHer, Maria kindly served me a tasty lunch. She whipped up a super yummy chicken wrap, using chicken that had been grilled with the following rub recipe.
It was stupendous.
I ate it, raved about it, then asked for permission to share it with you. Because it's nice to share.
Maria's hubby, Kyle, conjured up this recipe himself. I believe it was modeled after a rub he'd had elsewhere. They prepare a family-pack of chicken with this rub recipe on Sunday nights, grill it, and then eat it throughout the week: on sandwiches, wraps, salads or just plain on it's own.
Here it is, in all of it's glory:

Kyle's Spice Rub
Yields enough rub for ~ 5 lbs of chicken breasts/parts or 1 whole roaster chicken.
Can also be used for steak
2 T Kosher salt 2 T Sugar In The Raw 1 T Granulated Garlic 1 T Onion Powder 2 tsp paprika 2 tsp oregano 1 tsp chili powder 1/2 tsp cayenne pepper 1 T extra virgin olive oil
Preheat grill on high.
In a small-medium mixing bowl, combine everything except olive oil. Mix together until well blended. Add the olive oil. Mix until uniform.
With about 1-2 tsp per chicken breast (I usually slice whatever breasts I get in half longways before rubbing), rub on both sides until well-coated.
Place breasts on preheated grill and turn heat down to low. Cook on each side for about 7 minutes a side. Remove and allow to rest for 5-10 minutes.

Super yum, right? SO good: the chicken comes out not too hot, but has a nice kick. Maria used this chicken to make a wrap with roasted red peppers, feta cheese and italian dressing. Nom nom.
