It's Monday! And although I haven't been the greatest recently at keeping with this tradition, it's RECIPE TIME!
Now, this particular Monday, I do not have a Simple Supper recipe for you. I do have a few that I am excited to share with you in the coming weeks (yay for new dinner inspirations!) but today I HAVE to share with you the amazing side dish brought to my attention by alert awesome friend, Krista.
Over the Winter Break, we had a fun night with a bunch of Hubby's coworkers. The hostess made one of the best slow cooker pulled pork sandwiches I've ever had (it involved the usage of liquid smoke. Need I say more?). And one culinarily gifted friend, Krista, brought along the only reasonable side dish to serve with pulled pork sandwiches: Coleslaw.
But not just any coleslaw.
APPLE Coleslaw.
And for the purposes of this post, we shall, from here on out, refer to said slaw as Apple Slaw.
And friends? Can I tell you? IT WAS SO GOOD.
Me? Not really a coleslaw person. I appreciate that Chick-Fil-A often throws in a small container with purchases. And sure, they are the obvious side dish at summer gatherings. And while I indulge every once in a while (since I do enjoy cabbage), it's not really my thing.
Until I met Apple Slaw.
And it's all been downhill from there.
What do I love about Apple Slaw? It is light - not overly mayonnaised and spiced. It is simple, refreshing, with the perfect hint of sweetness (brought to you by, you guessed it! Apples!). And if you throw a heaping spoonful onto your pulled pork sandwich, you'll never be the same.

Krista's Apple Slaw
For the Dressing:
- 1/2-3/4 cup of mayo (depending on what texture you are going for)
- 1 TBSP dijon mustard
- 1 tsp. sugar
- 2 tsp. of apple cider vinegar or red wine vinegar
- Juice of one lemon
- Salt and pepper.
For Slaw:
- 1/2 head of cabbage, sliced very thin
- 2 carrots, shredded
- 1/2 small red onion, thinly sliced half moon
- 1 gala apple, julienned
(If you want to simplify, you can also use 1/2 container of bagged coleslaw mix, adding the onions and apples as stated above)
Combine the slaw vegetables with the dressing.
Combine the slaw vegetables with the dressing.
Chill in the refrigerator for a hour.
Serve!
