I know, it's a day late. And I know, it has been far too long since I've posted a Simple Supper recipe. I think with the craziness of this Winter, I've messed around with the same few recipes to keep things simple.
I'm all about keepin' it simple.
I've also mentioned before that I'm a bit uninspired. ::Sigh:: I'm not sure why. I guess I just haven't come across anything good in my searches, readings and travels.
But there is hope on the horizon.
And the first ray of hope comes from awesome and alert blogger Jhenna. I love how the blog-o-sphere is great at connecting people. And I'm so excited to pass along the recipe Jhenna emailed me in response to my urgent pleas (ie: "Help. I'm uninspired. Send recipes. SOS."). Thank you, Jhenna! I can't wait to try this (especially since asparagus is just coming into season)!

Simple Supper Monday
Asparagus and Chicken Stirfry
- 2.2 pounds Chicken Breast (I just used 4 breast because I had a bunch of people over)
- 1 tbsp olive oil
- dash of salt (I used some of my favorite seasonings)
- 2 tbsp soy sauce
- 2 tbsp minced garlic
- 6 cups of sliced asparagus
- 1 cup chicken broth devided
- 2 tbsp corn starch
- 1 cup sliced into halves - Cherry Tomatoes
- 1 tbsp paprika
Heat olive oil and then add in cubed chicken breast and stirfry for about 3 minutes then add the soy sauce and paprika. Add asparagus and then add 1/2 cup of the broth. Cover for 4 minutes. Meanwhile add cornstarch into the remainding broth then add the tomatoes to the mixture. Pour all that into the skillet. Add garlic and stir over low flames until it's all thick.

Jhenna recommends serving this with some brown rice for a tasty and healthy meal.
