I posted this recipe last year, when I was a young and naive blogger (read: stinky blogger). I thought it might be fun to repost it, in celebration of St. Patrick's Day tomorrow.
Now listen up: I am in no way Irish. Not even a little bit. If a St. Anthony's Day (or something of that nature) was started in honor of all us Italians out there, we'd be talking. Needless to say, I don't do much to celebrate St. Patrick's Day.
But I do jump on any opportunity to make a tasty treat. Who doesn't? My friend, Rachel, made up these fun little guys a few years ago for a St. Pat's party we went to. I was obsessed. There is nothing complicated about them - they are really just Rice Krispy treats made with an Irish-themed cereal. Either way, it is fun, simple and festive. This would be a fun project to do with your kids (or friends or spouse or yourself) tonight. What a cute treat for the kiddos to share with their friends at school! Or to "accidentally" (read: intentionally taken out of their backpacks) be left home, giving their parents no other option but to eat them?
I'll be making these for my Hubby to bring into school with him tomorrow for him and his fellow teachers. I will, of course, make some for myself to enjoy.

- 3 tablespoons butter or margarine
- 1 package (10 oz., about 40) regular marshmallows - OR - 4 cups miniature marshmallows
- 6 cups Lucky Charms cereal
1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
2. Add Lcuky Charms cereal. Stir until well coated.
3. Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Cool. Cut into 2-inch squares. Best if served the same day.

So run out and get the ingredients so you can enjoy these tomorrow! Or tonight! Or maybe this afternoon! And, don't forget to grab a pint of Guinness as well...for the sake of honoring the holiday, of course :)
