Our Meatless Meal endeavor has continued to be successful, if not more so than we originally thought. We've easily cut meals with meat down to 2 times a week (give or take). It, surprisingly, has taken minimal effort or thought. After watching Food, Inc the other night, Hubby and I are only more motivated to make this our lifestyle!
I made this Meatless Meal recipe by slightly manipulating a previously posted recipe called Birthday Chicken. The former recipe is a great and tasty meal. The Meatless twist was delicious, and I look forward to making it again later this week! As long as the ingredients are on hand, it comes together in less than 5 minutes, and only needs to bake for 20 minutes! This is especially great if you've already made some Roasted Vegetables for the week, and have some to spare. And, I think this is a meal you could easily serve to guests, whether they love meat or not...or are just adventurous enough to try a Meatless Meal!

Meatless Meals
Roasted Vegetable Pockets
(Serves 2)
- 3 oz cream cheese
- 2 c. Roasted Vegetables (see THIS post for the recipe)
- 1/4 tsp salt
- 1/8 tsp pepper
- 2 T milk
- 8 oz can crescent rolls
Combine cream cheese, roasted vegetables, salt, pepper and milk in a small bowl. Set aside.
Separate the crescent rolls into 4 rectangles and firmly seal the cut line (note: the crescent rolls are perforated into triangles. 2 triangles will make a rectangle - so you will end up with 4 rectangles, each made of 2 triangles. Geez, math).
Spoon Cream Cheese/Veggie mixture onto 2 of the crescent roll rectangles, evenly distributing the mixture between them.
Top each with a remaining rectangle.
Bake at 350º or 20-25 minutes (until browned).
Notes:
1) If you need any direction on this recipe (ie: how to make these pockets out of the crescent rolls) - refer back to the original Birthday Chicken post, where I have some pointers on how to go about it. Perhaps I will add some "how to" photos to this in the near future.
2) Sometimes I use 2 or 3 cartons of crescent rolls, and spread the mixture out over several pockets (using this recipe, you will have 2 VERY full pockets). But, if you want to make this for several people, add a bit more cream cheese and a little more veggies. Rule of thumb: 1 package of crescent rolls serves 2 people.

These are seriously tasty, and VERY filling. Hey, veggies are FULL of fiber. Just ask Hubby. Unfortunately. For me.
