Somehow, this little gem of a recipe slipped between the cracks. I cannot believe it is only now that I am getting around to posting it. As states the title, it is SIMPLE. Actually, it was one of the first recipes I ever received from someone else (Thanks, Melena!). This recipe makes a great, easily-thrown-together week night meal (or, a fun off-the-beaten path lunch for you and some girlfriends). The base recipe is just a few ingredients, but you can be as creative as you'd like!

Simple Supper Monday
Quiche
- 1 can cream of chicken soup
- 1/2 c. milk
- 4 eggs
- 1 tsp flour
- 1 c. shredded sharp cheddar cheese
- 1 9-inch pie shell (unbaked)
- ASSORTED FILLING (up to your discerning palate: broccoli and asparagus! ham and onion! BBQ chicken and green peppers! The sky is the LIMIT!)
- Salt and Pepper
1) Combine the soup, milk and eggs in a bowl.
2) In a separate bowl, toss the cheese, flour and your creative assorted filling creations (I LOVE broccoli and asparagus, but one time Melena made me a carmelized onion and ham quiche that WAS. TO. DIE. FOR).
3) Line the bottom of the pie plate with the unbaked pie shell. Sprinkle the cheese/filling mixture over the pie shell. Pour the egg mixture over the filling. Sprinkle with salt and pepper to taste.
4) Bake at 350* for 45 mins, or until a knife comes out clean (the top may still be jiggly, but take it out and let it sit for 15 minutes. It WILL set).
5) ENJOY!

I love that it is so simple, but if you choose the right ingredients, it can be a pretty impressive gourmet-type dish! Quiche also makes a great brunch recipe for those holiday get-togethers!
