Yesterday, we decided pancakes would be a great way to start our morning. We were using a generic "just add water" mix. I wasn't satisfied with serving such wimpy pancakes, as eating even 3 or 4 of them often leave me feeling hungry only a little while later. A few thoughts ran through my head, and the outcome was a much heartier breakfast that easily kept all 3 of us full until lunch (that's right, 11 month old Lucy enjoyed them as much as we did). They were tastier than regular pancakes, smelled delicious as they were baking, and had more fiber (which makes them healthier for you too!)

Easy Breakfast
Pumped Up Pancakes
- Pancake Mix (enough for roughly 4-8 pancakes, check the back of your box for exact measurements - mine had 3/4 cup mix for 5-7 pancakes)
- Water (the corresponding amount according to box)
- 1 cup Quick Cooking Oats
- 1 tsp Cinnamon
- 1/2 tsp Ground Cloves
Combine all of the ingredients, and cook on griddle according to package directions (mine instructed about 1/4 cup of batter over medium heat for about 2 minutes on each side - wait until they are brown and hardening around the edges). These pancakes fluffed up more than regular pancakes, so I had to cook them a little longer on each side.
