Today is 2-for-1 Simple Suppers!
I have a few more slow cooker recipes on deck to be shared, one of which will grace this blog today. It's one of the simplest recipes I know - only 2 ingredients. The reason for 2 recipes today is that my dear aunt-in-law (does that even exist?), Brenda, shared with me a recipe that I would consider a sister recipe to the one I am going to share today! (I call it a "sister recipe" because my recipe calls for beef, and her recipe calls for chicken, but the rest of the ingredients are the same).
Recipe note - I first had this recipe prepared by my amazing MIL, Martha. I've since found it floating around church cookbooks and other various places. I was inspired to share this one because Martha made it for dinner tonight. Mmmmm.
Also note - These are both Keeper recipes.
Simple Supper Monday
(Recipe #1)
Slow Cooker Mushroom Roast
- 2-3 lb Eye Round of Beef, Bottom Round, Rump Roast, Chuck Roast, etc (whatever kind of bottom beef cut you have will do - I usually go with whichever is on sale that week)
- 1 can of Cream of Mushroom soup (condensed)
Combine. Throw in slow cooker on low for 6-8 hours.
THATS IT.
At the end of 8 hours, you will find the roast has made its own gravy. Goes great with a crusty bread and a salad.
**When you first put the soup in, you will find yourself wondering if this is enough "juice" to cook the roast AND make gravy. It amazes me every time, but it works. Trust me. And it makes enough food for guests, too.
(Recipe #2)
Brenda's Slow Cooker Mushroom Chicken
- 1 cut up chicken OR package of chicken breasts
- 2 cans of cream of mushroom soup
- (1 can of mushrooms, OPTIONAL)
Combine and cook on low all day.
Brenda advises serving the dish over rice or noodles. She also notes that one could experiment with adding a little cooking wine, but insists it's good with just the 2 ingredients.

ReplyDeleteDo you think I would be able to use a package of fresh mushrooms instead of a can of mushrooms? I prefer fresh but can't tell if it would affect the recipe in any way. Have a happy Friday!
Hey Alison! I'll email you this as well, in case this comment doesn't get to you. You definitely need at least ONE can of CREAM OF MUSHROOM SOUP, if not too. Adding any additional mushrooms are your call - and they can either be canned or fresh. Sorry it took so long to reply!
